Annual Wild Rice

Zizania aquatica

Zones 5–10

Growing

Annual wild rice needs constant moisture, as this species grows in aquatic environments and heavy, wet soils. When sowing, choose areas where the substrate stays submerged or saturated, like the marshy habitats of the Atlantic and Gulf coasts. This is an annual grain, so manage the water depth through the growing season.

As the crop matures, check the grains. Inspect the seeds for pink or purplish blotches or unusual growths, which can indicate infection by the toxic ergot fungus. This fungus is dangerous if consumed, so discard any grain showing these signs. If Canada geese frequent the area, you may need to keep them from grazing the crop.

Harvest occurs in late summer or early fall, when the seeds have matured and are ready for processing. The seeds are a staple for porridges and salads. Check that the harvest is free of fungal discoloration before use.
