Because they are essentially domesticated thistles, artichokes develop massive, architectural leaves that radiate from a central base. When planting these perennials, ensure your soil is well-draining and maintains a pH between 6.0 and 7.5 to prevent root issues. Since a single plant is capable of setting fruit on its own, you do not need to worry about cross-pollination for a harvest, though the large blooms are excellent for attracting pollinators to your garden.

Timing your harvest is critical because the edible portion is the flower bud itself. You must pick the heads while they are still tight and before the flowers begin to bloom; once the blossoms open, the structure becomes coarse and loses its culinary appeal. For the best quality, harvest when the buds are at your preferred size but still firm.

If you find yourself with an abundance, you can preserve the harvest by blanching the buds before freezing them. For fresh use, keep your harvested artichokes unwashed in the refrigerator to help them maintain their freshness. If you are growing in a smaller space, these plants adapt well to containers, provided they have plenty of sunlight and regular moisture.
