Bitter melon needs a warm, tropical environment, as this vine is sensitive to frost. Once the soil has warmed, sow seeds directly into the ground or into containers. This plant is a vigorous climber, so provide a sturdy trellis or support early to let the vines trail or ascend. Aim for slightly acidic soil, ideally with a pH between 5.5 and 6.5.

Watch the vines for the fruit fly, a common pest for this species. Harvest the fruit while it is still green or in the early stages of yellowing for the best flavor. Once the fruit reaches full maturity and turns bright yellow, it can become overly bitter and the seeds become toxic, so do not wait too long. Bitter melon does not improve with age after being picked, so harvest it at the right moment for use.

You can eat the young shoots and leaves as greens, or use the fruit in stews and stir-fries. An abundance of fruit can be blanched before freezing. Drying or pickling also preserve the harvest. Keep the fruit unwashed during storage so it lasts longer.
