As a climbing perennial vine, black pepper thrives when given a sturdy structure like a trellis or a tree trunk to scale. Because this plant is highly sensitive to cold, ensure it is established in a protected spot once the danger of frost has passed and the soil has warmed. It prefers a slightly acidic environment, so aim for a soil pH between 5.5 and 7.0. While it can grow in containers, ensure the medium provides excellent drainage to prevent waterlogged roots, which can lead to rot.

You will know your crop is ready when the small, round drupes have reached a dark red color. Unlike many other garden crops, these berries do not ripen further once they are removed from the vine, so you must harvest them at the peak of maturity. To produce the classic black peppercorn, the unripe green fruit is typically blanched in hot water to rupture the cell walls, then dried in the sun or via a machine. This drying process allows enzymes to trigger the characteristic browning and wrinkling of the skin.

For long-term use, keep your harvested peppercorns unwashed to prevent moisture buildup. Once dried, you can store them at room temperature in a dry place.
