Butternut squash is a vigorous vining plant with a sprawling habit. It can trail across the ground or climb a sturdy trellis. Sow seeds once the soil has warmed, in well-draining soil at a pH between 6.0 and 7.5. In containers, use a vessel large enough for the expansive root system and the heavy fruit.

As the vines mature, check the developing fruit to make sure it is fully ripe before you harvest. Butternut squash does not ripen once removed from the vine, so pick it at full maturity. For long-term use, do not wash the skins immediately after harvest. Keep them clean and dry.

The harvested squash stores well in a cool, dark cellar. For use in the colder months, blanch the flesh and freeze it for soups or stews.
