Because it is highly sensitive to cold, you must protect the plant from even light frost, as freezing temperatures will kill the herb. If you are growing in a container, ensure the medium provides excellent drainage to prevent waterlogged roots, while still allowing for the constant moisture this species demands.
When your plant begins to produce fruit, you must harvest the pods while they are fully ripe, as cardamom does not continue to ripen once it has been picked. For the best flavor and aroma in your curries or teas, harvest the pods immediately when they reach maturity. To preserve the spice, keep the pods unwashed to prevent rot. You can store your harvest at room temperature in a cool, dark place, or dry the pods to extend their usability for long-term use in your kitchen.
