Growing

Celery thrives in damp, coastal-like conditions, so your primary goal is to maintain constant moisture in the soil. When preparing your garden bed, aim for a slightly acidic environment with a pH between 5.5 and 6.5. Because this is a cool-season crop that prefers even moisture, it is an excellent candidate for container gardening, provided your pots offer excellent drainage to prevent the roots from sitting in stagnant water.

Since celery does not ripen once it has been harvested, you should pick the stalks when they have reached your desired size and tenderness. For the best flavor and texture, harvest the stalks ready to use. If you plan to preserve your harvest for later, blanch the stalks before placing them in the freezer to maintain their quality. If you are growing specific varieties like celeriac, remember that you are cultivating the plant for its swollen, bulb-like hypocotyl rather than just the stalks.

To keep your stalks tender and sweet, you can use a technique called blanching, which involves covering the developing stalks with a container or leaves to block out light. This prevents the stalks from becoming tough or bitter. When storing fresh stalks, keep them unwashed in the refrigerator to prevent premature decay.
