Because citrons are highly sensitive to cold, you must protect them from even light frost, making them ideal for container gardening in cooler climates where they can be moved indoors. When planting, aim for a soil pH between 6.0 and 7.5 and ensure the drainage is excellent to prevent waterlogged roots. If you are growing a variety like Buddha's hand, be prepared for its unique, finger-like growth habit, which can become quite heavy.
The fruit's appearance varies wildly depending on the variety and its position on the tree; some are ribbed or warted, while others are smooth. You will know it is ready to harvest when the rind shifts from green to a vibrant yellow-orange. Unlike many other citrus, the citron does not ripen further once picked, so you must harvest it when it reaches your desired maturity. Depending on the type, you may encounter a thick, white, pithy interior or a pulpless fruit.
When you harvest, do so carefully to avoid bruising the leathery rind. To maintain the quality of your harvest, store the fruit unwashed at room temperature. If you are working with particularly bitter varieties, a salt treatment can help remove the bitterness before you use them in confectionery or preserves.
