Growing

Dandelions are incredibly resilient perennials that thrive in a wide range of light conditions, from full sun to partial shade. If you are cultivating them for their edible leaves, focus on preparing a well-draining soil with a pH between 5.5 and 7.5. While they are famously drought-tolerant once established, they prefer soil that is not waterlogged. You can easily propagate your patch by sowing seeds directly into the garden or by dividing existing clumps once the soil has warmed in the spring.

When harvesting the leaves, pick them while they are still tender and ready to use, as they do not continue to ripen after being gathered. For the best flavor and nutrient retention, harvest the leaves in the cool weather of spring before the plant matures and the leaves become overly bitter. If you are interested in the flowers, the bright yellow heads can be used to create flavored wines or fermented extracts.

To keep your harvest fresh, store the unwashed leaves in the fridge. If you have a large surplus, you can also dry the leaves or even preserve them through pickling. Because the plant is so hardy, it will easily survive a hard freeze, making it a reliable addition to any container garden or landscape.
