Elderberry
Sambucus nigra
Zones 4–8
Growing
Elderberry is a resilient, woody shrub that thrives in moist environments and can even tolerate wet soil. When establishing new plants from cuttings, be aware that survival rates can be lower than other methods, so many gardeners prefer using division or planting nursery stock. If you are attempting to grow from seed, you may encounter significant delays in germination due to the hard seed coat; a warm stratification period of about two months in a peat, vermiculite, and sand mix can help break this dormancy.
To maintain a vigorous shrub, avoid allowing livestock to graze near your plants, as overgrazing can damage the vegetative structure and reduce fruit production. While the berries are highly prized, remember that the seeds, leaves, and stems contain compounds that can cause illness if eaten raw. Always ensure the fruit is properly prepared before consumption.
When the fruit is fully ripe, harvest the clusters and use them immediately or preserve them for later use. For long-term storage, you can freeze the berries, dry them, or use them for canning. To maintain the best quality, store your harvested berries unwashed in a cool area.
