Sow endive in well-drained soil with a pH between 6.0 and 7.0 for this cool-season annual. Because this crop grows in milder temperatures, you can plant it once the soil has warmed in the spring or during the cooler months of the fall. To prevent root rot, which is common in poorly draining areas, consider raised beds to keep the base of the plant above waterlogged ground.

As your plants grow, check the leaves for signs of distress. Good weed control around the base is essential, as weeds compete with the endive for nutrients and moisture. If you are growing in containers, use ones with good drainage to prevent the roots from sitting in stagnant water.

Harvest the leaves when they are ready to use, as the plant does not continue to ripen once picked. For the best quality, pick the leaves while they are still crisp and avoid letting them over-mature. If you plan to preserve your harvest, you can blanch the leaves before freezing them. For short-term use, keep the leaves unwashed in the refrigerator to maintain their texture.
