Fennel is a versatile herb that grows in cool weather. Because it is a perennial, you can establish your plants from seed or by dividing existing clumps. Use well-draining soil with a pH between 6.0 and 8.0. If you are growing fennel in containers, water regularly to prevent the soil from drying out completely, as consistent moisture keeps the plant's texture tender.
Fennel does not continue to ripen once it has been picked, so timing matters. You can harvest the tender young shoots or the inflated leaf bases to use much like celery in salads, braised dishes, or risottos. To preserve the flavor, dry the fruits for use as a spice in sausages, desserts, or spice blends. If you plan to freeze your harvest, blanch the fennel first to preserve its quality. To keep your harvest fresh in the refrigerator, store the stalks unwashed to prevent premature decay.
