Because horseradish is a vigorous perennial, it is best established by dividing existing crowns or planting tubers rather than starting from seed. You can grow it in containers or directly in the ground, provided the soil is evenly moist and maintains a pH between 6.0 and 7.5. While the plant is quite hardy and can survive a hard freeze, keep an eye on the foliage during the early growing season. You might notice young, spiky, asymmetric leaves before the plant develops its mature, broad, flat leaves.

Watch closely for cabbage worms, which are small caterpillars that leave large, ragged holes in the foliage. If you see them, handpicking them off the leaves is a simple and effective way to manage the infestation. You should also look out for the mustard leaf beetle, a pest that is not deterred by the plant's natural defenses.

When it is time to harvest, remember that the root does not improve in flavor after being picked, so you should harvest it when it is ready for your needs. For the best quality, store the unwashed roots in a cool, dark cellar or the refrigerator. If you choose to prepare it yourself, you can mix the grated root with vinegar to create a prepared horseradish, but keep in mind that this mixture will eventually darken and lose its characteristic pungency after a few months.
