Hyacinth bean is a vigorous climbing vine and needs vertical support, such as a sturdy trellis or fence, for its sprawling growth. Once the soil has warmed and the danger of frost has passed, sow seeds directly into the garden. Prepare a site with rich, well-draining soil. If you are growing the variety for its pods, harvest them while still tender for curries or salads.
When the pods mature and the seeds harden, harvest them for long-term use by drying them thoroughly. The dried seeds can be used in traditional herbal preparations or fermented and pickled. To use the beans fresh, soak them overnight and remove the outer seed coat to reach the soft, inner part. The seeds should not be consumed raw.
