Growing an ice cream bean tree requires a commitment to warm, tropical conditions, as even a light frost will kill the plant. If you are planting in a container, ensure the pot provides excellent drainage to prevent the roots from sitting in waterlogged soil. This tree thrives in slightly acidic to neutral environments, specifically targeting a pH between 5.5 and 7.0. Because this is a legume, it is a wonderful addition to a garden for providing shade and attracting pollinators with its fragrant, white, spike-like flowers.
When your tree reaches maturity, you will notice long, cylindrical pods hanging downward. These pods can grow quite large, sometimes reaching up to one meter in length, and may appear straight, curved, or even spirally twisted. Unlike many other fruits, these pods do not ripen once they have been removed from the tree. You must harvest them when they are ready to use to ensure the pulp remains sweet and smooth. Once picked, keep the pods unwashed to maintain their quality, and you can store them in the fridge to extend their freshness.
