Jerusalem artichokes spread vigorously and are best planted from tubers rather than seeds, which gives a higher yield. You can cut larger tubers into smaller pieces, provided each segment contains at least three to five buds. Place the pieces in the soil at a depth of about two to four inches once the ground has warmed. They grow in full sun, are hardy, and can withstand hard freezes, making them a reliable perennial.
Watch soil moisture, as the plants require regular watering but cannot tolerate waterlogged conditions. Monitor for stem rot caused by the fungus Sclerotium rolfsii, which can devastate yields. Resistant varieties are the best defense against this pathogen. Because these plants are members of the sunflower family, they attract pollinators.
Tubers do not ripen further once removed from the ground, so pick them when they are ready for your needs. For long-term use, store the harvest unwashed in a cool, dark cellar or the fridge. If you plan to freeze them, blanch the tubers first to preserve their quality.
