Lime
Citrus latifolia
Zones 9–13
Growing
Because Persian limes are highly sensitive to cold, you must ensure your tree is protected from even light frost. If you are growing in a climate that experiences temperature drops, these trees thrive beautifully in containers, which allows you to move them into a sheltered area or indoors when the weather turns chilly. When planting, aim for a well-draining soil with a pH between 6.0 and 7.5 to keep the roots healthy and prevent waterlogging.
Unlike many other fruits, Persian limes do not continue to ripen once they are removed from the branch. You should harvest the fruit when it reaches your desired maturity, though you may notice the skin turning from a deep green to a yellowish hue as it reaches full ripeness. Because they are often sold while still green, keep an eye on the color and size to ensure you pick them at the right moment for the flavor you prefer.
Since these trees are often propagated through grafting or air layering rather than seeds, you can find established nursery stock that is nearly thornless, making them much easier to manage in a home garden. Once harvested, keep your limes unwashed to help them last longer. If you need to extend their use, you can store them in the fridge to maintain their freshness.
