Growing nutmeg requires a commitment to a tropical environment, as this evergreen tree thrives only in warm, humid conditions and cannot survive even light frost. If you are growing it in a container, ensure the soil remains consistently moist but never waterlogged, ideally maintaining a slightly acidic pH between 5.5 and 7.0. Because the species is carpellate, you must plant at least two separate trees nearby to allow for pollination.

When your tree reaches maturity, you will know it is time to harvest when the fleshy, yellow, pear-shaped fruit naturally splits open along its length. This opening reveals the shiny, dark seed encased in a vibrant crimson aril. You must pick the fruit once it is fully ripe, as the spice will not continue to ripen after being removed from the tree. Carefully separate the red aril, which provides the spice mace, from the inner seed used for nutmeg.

To preserve the potency of your harvest, keep the seeds unwashed. For long-term use, you can store your nutmeg and mace in a cool, dark cellar or a dry, room-temperature area. While the seeds themselves are the primary spice source, the aromatic aril is equally valuable for culinary and fragrance uses.
