Oregon Grape
Mahonia aquifolium
Zones 5–9
Growing
This hardy, woody shrub thrives in a wide range of light, from deep shade to full sun, making it an excellent choice for understory planting. When establishing new plants, ensure your soil remains well-drained and stays within a slightly acidic to neutral pH range of 5.0 to 7.5. While you can propagate this species via seed or by dividing established clumps, many gardeners prefer transplanting nursery stock for faster results.
The small, purplish-black berries are quite tart and contain large seeds, so they are best used in jellies or mixed with sweeter fruits like salal. For the best flavor, wait to harvest until after the season's first frosts have passed. Because these berries do not continue to ripen once they are removed from the branch, you must pick them only when they have reached full color.
If you plan to use your harvest later, keep the berries unwashed to prevent premature spoilage. Depending on your needs, you can store them in the fridge or use them for fermentation to create a unique wine. Beyond the fruit, the inner bark of larger stems and roots can even be used to produce a vibrant yellow dye.
