Growing

Paprika suits a warm-season garden. These compact bushes grow once the soil has warmed and the threat of frost has passed. Because the plants do not ripen once removed from the vine, harvest the peppers when they have reached their full color and maturity. Keep the soil well-drained and water regularly so moisture stays consistent.

Watch your plants for pests that can disrupt production. Aphids and whiteflies are common and can carry viruses, while the pepper weevil can devastate your yield by attacking the plant during flowering and fruiting. You may also encounter thrips or tobacco budworms. Practice good garden sanitation by removing fallen or diseased plant material, which helps prevent diseases like anthracnose or various root rots.

Beyond fresh use, you can dry the peppers to make powders like pimentón or cayenne, or preserve them by pickling. To freeze them, blanch the peppers first. Store unwashed peppers in a cool, dark cellar or in the fridge.
