Establishing a rosemary shrub requires prioritizing drainage above all else, as this Mediterranean native thrives in well-drained soil with a pH between 6.0 and 7.5. While it is exceptionally drought-tolerant once established, avoid letting the roots sit in waterlogged earth, which can lead to rot. If you are planting in containers, ensure the pot has ample drainage holes to mimic its natural rocky habitat. Because this is a woody perennial, you can shape it into formal hedges or even topiary through regular pruning, which also helps maintain a tidy growth habit.
For the best flavor, wait until your plant has matured for at least two to three years before you begin regular harvesting. When you are ready to use the herb, simply snip the fragrant, needle-like leaves or tender stems. Unlike some herbs, rosemary does not improve in flavor after being picked, so harvest only what you need for immediate use. To keep your harvest fresh, store the sprigs unwashed in a cool, dark place or the refrigerator. If you have an abundance, rosemary is also excellent for drying to preserve its aromatic oils for long-term use.
