Salal
Gaultheria shallon
Zones 6–8
Growing
Establishing salal in your garden is most successful when you mimic its native woodland habitat. This evergreen shrub thrives in acidic environments, so aim for a soil pH between 4.5 and 6.0. It particularly loves moist, sandy, or peaty substrates and can even be found growing on decaying wood or stumps in very humid settings. If you are planting in containers, ensure the medium remains evenly moist but well-drained to prevent the roots from sitting in stagnant water.
Because salal is a hardy, woody shrub, you will typically plant it using nursery stock, cuttings, or division rather than sowing seeds. Once established, the plant is quite resilient; its underground rhizomes are capable of surviving light to moderate fires and can resprout even if the aboveground foliage is damaged. While it provides excellent cover for birds and pollinators like hummingbirds and bees, be mindful of its vigorous growth habit. In some unmanaged settings, it can form very dense, tall stands that may compete with other young plants for light and nutrients.
When the berries appear, you must harvest them at their peak because they do not continue to ripen once removed from the bush. For the best quality, pick the fruit when it is fully ready to use and store it unwashed in the fridge to maintain freshness. If you have a surplus, you can also freeze the berries for later use.
