Sow your summer savory seeds once the soil has warmed and the danger of frost has passed. This annual herb thrives in well-draining soil with a pH between 6.0 and 7.5, and it performs exceptionally well in containers if you ensure the medium does not become waterlogged. Because it is quite drought tolerant, you can let the soil dry out slightly between waterings, which helps concentrate its delicate, peppery aroma.
As the plant matures, you will notice small, lilac-colored tubular flowers blooming in the late summer. These blossoms are excellent for inviting bees, wasps, and hoverflies into your garden, supporting a healthy local ecosystem. Since the plant produces a single upright stem, it requires very little structural support, though you should keep an eye out for ants, which play a role in dispersing the seeds.
To enjoy the best flavor, harvest the herb when it is ready to use, as it does not improve in quality after being picked. For long-term use, you can dry the leaves or freeze them to preserve that characteristic sweetness.
