Sweet potatoes need heat, so wait until the soil has warmed and all danger of frost has passed before planting. You can start from seed, but cuttings or slips are often more efficient for establishing the trailing vine. Aim for slightly acidic soil, between pH 5.5 and 6.5, and provide good drainage in the bed or container to prevent the roots from rotting in waterlogged conditions.
As the vines spread across the ground or climb, watch for signs of chlorotic stunt virus or Phytophthora diseases, which can cause rot or stunted growth. Water regularly during the warm season to support the developing tubers. Harvest the tubers before the first frost, as cold temperatures will damage the crop. Unlike many other garden vegetables, sweet potatoes do not continue to ripen once removed from the ground, so pick them when they are fully developed.
Keep the harvested tubers unwashed to help them last longer. Store them in a cool, dark cellar. To preserve them for later use, blanch the tubers before freezing.
