Sweet Violet
Viola odorata
Zones 5–9
Growing
Establishing a lush, fragrant carpet of sweet violet is easiest when you focus on moisture and shade. These hardy perennials thrive in even, moist soil that stays slightly acidic, ideally between a pH of 5.5 and 7.0. Because they naturally form a low, spreading mat, they are excellent for filling in the gaps under larger shrubs or in container gardens where you can easily manage the soil moisture. If you are starting from seed, wait until the soil has warmed in the spring, but if you are using division, you can transplant established clumps once the danger of hard freezes has passed.
The flowers and leaves are entirely edible, making this a functional addition to your edible landscape. You can harvest the blooms for culinary delights like syrups, scones, or marshmallows, or even to create fragrant extracts. If you harvest more than you need immediately, you can dry the flowers to preserve their delicate scent and flavor for later use. When the plant is established, it serves as a wonderful magnet for pollinators, adding both beauty and life to your garden corners.
