Growing
Thyme is a versatile, woody subshrub that functions beautifully as a fragrant groundcover. Because it naturally forms a low, spreading mat, you can use it to fill gaps in your garden or grow it in containers. When starting your herb, you can grow it from seed, or more easily, establish new plants through cuttings or by dividing existing clumps. If you are planting in the garden, ensure the site is well-drained, as the roots do not tolerate waterlogged conditions.
To keep your thyme productive and tidy, regular pruning is helpful. Trimming the plant helps maintain its shape and encourages the development of lateral branching, which leads to a fuller, denser mat. This herb is a wonderful addition to pollinator gardens, as its clusters of pink or purple flowers attract beneficial insects during the warm season.
When it is time to use your harvest, pick the leaves when they are ready to use, as the plant does not continue to ripen once picked. For the best flavor, use the herb immediately after gathering. If you need to preserve your harvest, you can dry the leaves or store them in the fridge or freezer. If you choose to store them, keep the herb unwashed to help it last longer.
