Achieving a successful harvest of wasabi depends heavily on mimicking its natural, cool environment. While you can grow "field wasabi" in soil, traditional methods often utilize a semiaquatic system where the rhizomes sit in a stream bed of flowing, oxygenated water. If you are planting in the ground, ensure the area stays shaded and the soil remains consistently moist. For those using containers, providing constant moisture is essential to prevent the plant from drying out.

Nutrient management is key to developing substantial rhizomes. If your soil or water lacks natural runoff from upstream sources, you can supplement with a slow-release fertilizer containing nitrogen and sulfur. When using liquid nutrients, a nitrate-preferring approach works best, as the plant can be sensitive to high levels of ammonium. Keep an eye on temperatures, as excessive heat can lead to soft rot or heat damage, while extreme cold may stall growth.

Because the rhizome does not ripen after it is harvested, you must pick it when it is ready for use. Once gathered, keep the roots unwashed to help them last longer. For the best quality, store your harvest in a cool, dark cellar or the fridge. If you prefer a different flavor profile, you can also experiment with fermenting or pickling the rhizomes.
