Growing

Wheat is a hardy, cool-season crop that withstands even a hard freeze, so sow it in cool weather. Prepare the soil to a slightly acidic to neutral pH, between 6.0 and 7.5. Because wheat is wind-pollinated, insect pollinators are not needed, but the planting site should get plenty of sunlight to support the upright stems.

Watch for lodging, the tendency of stalks to collapse under their own weight or from heavy environmental pressure. Modern varieties are often bred with shorter stems to prevent it. High levels of fertilizer increase the risk of stems growing too tall and falling over. Wait until the grain is fully mature and ready to use before harvesting. Keep the harvested grain unwashed to prevent moisture from causing spoilage. For long-term preservation, store the grain in a cool, dark cellar or at room temperature in a dry environment.
