Winter savory is a hardy perennial, useful as a low-bunching plant for an edible border. Plant it in well-draining soil with a slightly alkaline to neutral pH between 6.0 and 8.0. It is drought-tolerant once established, but grows best in full sun. In a temperate climate, the plant may appear to die back during a hard freeze; it is simply dormant. Do not cut back the bare stems in winter, as they will leaf out again once spring warms.
Propagate the plant using softwood cuttings. If you notice aphids, check the new growth, though the plant is easy to maintain. Because the flavor is much more intense than its annual relative, summer savory, use it sparingly in raw preparations. Since the herb does not improve in flavor after being picked, harvest the leaves when they are ready for use. To preserve the pungent aroma, dry the leaves or freeze them for later use in soups, sauces, or meat seasonings.
