Brussels Sprout

Brassica oleracea var. gemmifera

Zones 1–8

Growing

Brussels sprouts prefer cool weather. They are hardy and can withstand a hard freeze. Aim for a soil pH between 6.0 and 7.5 so the plant can take up nutrients. The plants develop a single, upright stem, so they suit container gardening if the medium drains well and never becomes waterlogged.

As the season progresses, watch the developing buds along the stem. Unlike some other brassicas, the crop is the lateral buds rather than a central head. Harvest the sprouts individually once they reach the desired size. Pick them when they are ready to use, as they do not ripen once removed from the plant.

For long-term use, keep harvested sprouts unwashed to prevent rot. Blanch them before freezing, or store them in a cool, dark cellar or the refrigerator. They can also be fermented or pickled.
