Climbing Beans

Phaseolus vulgaris

Zones 7–13

Growing

Because these vines are vigorous climbers, you must provide sturdy support like a trellis, netting, or poles as soon as you sow the seeds into warm soil. Without a structure to wrap around, the vines will sprawl across the ground. To ensure the best quality, aim for a soil pH between 6.0 and 7.0 and ensure your planting site has excellent drainage to prevent waterlogged roots.

When it comes to harvesting, timing is everything for flavor and texture. You are looking for pods that are bright in color and feel fleshy and tender. If you wait too long, the pods can become tough, stringy, or develop a prominent "string" along the seam, which makes them much less pleasant to eat. Always pick the beans while they are still rapidly growing and the seeds inside are small and underdeveloped.

Once harvested, do not wash your beans if you plan to store them; keeping them dry helps prevent spoilage. For long-term use, you can blanch the pods before placing them in the freezer. If you are growing varieties intended for shelling, you can remove the seeds from the pods to dry them for later use. Always remember that raw beans contain phytohaemagglutinin, so ensure they are thoroughly cooked before eating.
