Growing

When you sow your seeds once the soil has warmed, you should first determine if you are growing a bush or a pole variety. Bush types stay relatively compact and erect, making them perfect for containers or small garden beds, while pole varieties will require sturdy support or a trellis to manage their long, climbing vines. Because these plants are self-pollinating, you can expect fruit even without heavy insect activity, though they certainly benefit from the presence of pollinators in your garden.

To get the best flavor, you must harvest the pods while they are still rapidly growing, fleshy, and tender. If you wait too long, the pods can become tough and stringy. Look for pods that are bright in color and contain small, underdeveloped seeds. Unlike many other garden crops, these beans do not continue to ripen once they are picked, so timing is everything.

If you have a surplus, you can blanch the beans before freezing them to preserve their quality. For long-term storage, you can also dry the seeds or use them in canning. When cooking, avoid adding acidic ingredients like tomatoes or too much salt too early in the process, as these can cause the beans to harden and significantly increase your cooking time.
